Savory Mug Muffin with Tomato-Avocado Salsa
Ingredients

- 1/4 cup grated zucchini
- 1/4 cup finely diced onion
- 1 tbsp bacon grease
- 1.5 tablespoons coconut flour
- 1 egg + 1 egg white
- 1 tablespoon coconut oil
- 2 tablespoons canned coconut milk
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/4 teaspoon baking soda
- pinch of salt
- 1/2 soft, ripe Avocado
- 1 medium tomato

Instructions
- Cook the onion and zucchini in the bacon grease until soft and translucent.
- Mash the vegetables into a puree
- Mix puree in a coffee mug with coconut flour, egg and egg white, coconut oil, coconut milk, spices and baking soda.
- Cook for 2 minutes in microwave on high
- While mug is cooling, dice tomato and mix with avocado
- Top mug muffin with salsa and enjoy!
